We all know the holidays are a super busy time. There is so much hustle and bustle that it can be hard to get dinner on the table. Well, I want to share one of my favorite recipes that we make. It is tasty and super easy to put together. This easy, one pot creamy tortellini tomato soup is delicious and everyone in my family loves it.
So the other day, it was a cold, snowy day that was perfect for soup. I stopped by Cub and picked up everything I needed plus Coca-Cola™, Diet Coke®, Gold Peak® Slightly Sweet Tea and Dasani® for our dinnertime beverages. It is so fun to pair dinner with a Coca-Cola because the flavor goes with anything!
My shopping trip was so easy because everything was easy to find and the tortellini tomato soup doesn’t take too many ingredients.
Once I got home, I was able to get down to business. This soup is a recipe I originally found on Gal on a Mission and tweaked slightly to make my own vegetarian version. First I got together my ingredients. Andrew and I always make a half batch of the original recipe because otherwise we end up eating it for a week! It is the perfect amount for us and Mac, so if you are making it for more than three people, double this recipe. We get together:
I’ve also been known to add other vegetables to this soup to try to beef up our vegetable intake. Frozen mixed veggies are the easiest to toss in on a busy night!
After getting everything together, it is super simple to throw together. First, you saute the onion, garlic, and rosemary in the olive oil. We do this right in the pot.
After 5 minutes, we add in everything except for the tortellinis and parmesan cheese.
Simmer for 20 minutes, then put in the tortellinis.
Once the tortellinis are cooked (after about 12-15 minutes), stir in the shredded parmesan cheese and serve.
And there you have it. A delicious dinner that everyone will enjoy! And you can add in different types of tortellinis, vegetables, and even some meat like shredded chicken if you’d like.
